With the Holidays that just passed, we are still going strong witha  couple of big weddings at Viscaya, The Spanish Monastery and corporate events from Miami to West Palm and Naples.

Once photographers have pictures ready, I will be posting them; all of our events are amazing and some of the pictures are real work of art.

 

With the economy the way it is, I cme up with my own economical catering package. Please note that this package could be a Wedding Reception, a Corporate Party or just a Birthday Party. I also like to work with ALL INCLUSIVE PACKAGES, there are no addons, straight pricing, never hassled anybody.

What I really like about the concept:

  • there is no need for a heavy dinner plate
  • there is no need for a knife
  • it is still “heavy” enough not to leave your guests hungry.

Here is what the package consist of:

  1. A full open bar for 4 hours
  2. An hour of passed around Mini appetizers ( sample HERE)
  3. Two stations: a Steak Diane and a Pasta Station( I will get back to the stations below)
  4. Desserts: mini french pastries and petit fours, fresh fruit
  5. Coffee
  6. All Fine China, Flatware and Glassware
  7. All Staffing: bar attendants, servers and culinary chefs

All of the above, based on a minimum of 100 guests: $49.95 per person.

MINI APPETIZERS

As a Caterer Miami, we love our made from scratch scrumptious 1 to 2 bites appetizers. From Baby Lamb Chops to Jumbo Shrimp and Maryland Crab Cakes, to some of the local favorites: Mini Empanadas, Mini Cuban 2 Biters, Coconut Chicken, Shrimp and a lot more.

 STEAK DIANE STATION

One of my own all time favorites. Mini Filet Mignons (3-4 ounces) are cooked to order. Then you are treated to our own White Trouffle Mashed Potatoes…incredibly yummy…

 

PASTA STATION

Not your ordinary station…nothing is ordinary about our food, services, displays. We take great pride in MAKING OUR OWN PASTAS…any other Caterer Miami out there that can honestly  claim that??? Quite a few different kinds of pastas, sauces, ingredients..along with amazing decor.

DESSERTS

No Caterer Miami can do anything close to our desserts: all one to two bites mini french pastries ( 20 or so different flavors), mini petit fours and fresh fruit. In fact our pastries are so outrageously amazing,w e have been contracted to develop a line specifically made for one of the major national hotel chains….very cool and proud( and we never went to them, they came to us…).

COFFEE

Nothing ordinary here either…lol. We use some of the best coffee beands around, the last impression is very important as well.

As 2010 rolls in, I would like to personally thank all of our clients for past business and hope that they have a great 2010 and see them again.

Catering in Miami is always fun, love the new ideas, the new trends. Often we get involved with high profile clientele that wants something “different”.

 

My latest acomplishment is a full blown cocktail party all done on 7” plates or smaller. I call it the ” Bites Dinner” menu. It includes a stationary Steak Diane display ( chefs flambee petite Filet Mignon to order), a tremendous pasta station( again chefs flambee pasta dishes to order), along with elegant passed around mini appetizers.

One of my all time favorites happens to be a Lobster Bruschetta served on a toasted croustade. I have been serving it for the past couple of months and have had great feedback.

As far as sweets, will end the night with an amazing display of mini french pastries and petit fours that include a Lava Cake that is out of this world.

I always include high end china, flatware and glassware. No caterer in town is able to match the quality food, staff, equipment and EXPERIENCE that we provide.

What Is a Nice Wedding Gotta Cost These Days???

 

With the economy going the way’s been going, the cost of a wedding is deffinately a concern. I have been in business long enough to understand this major expense in someone’s life.

HOTEL WEDDINGS

To me the hotels are all outdated. The same 20 year old carpet and 10 year old chandellier. The service staff gets paid based on minimum wage plus a precentage of the gratuities. That sometimes add up to not much, therefore high turnover. The food: subpar to say the least. I have friends that work in hotels ( some are 4 star properties on thge beach) and know first hand that their catering sales team SELLS SPACE, NOT FOOD, NOR SERVICE…lol. It is actually great news for me ( off premise caterer). This is what keeps us in business. Pricing: a chicken dinner with a full bar starts at about $90 and goes all the way up to $500 or even more per person…Love this too, my ALL INCLUSIVE WEDDING PACKAGES start at $49.95 and do not go over $100.00. Love it.

 

COUNTRY CLUB WEDDINGS

Very similar to the hotels, I used to work in a country club in Fort Lauderdale ( no names here). Much better food and service, but very pricey. Not much more to say other than you are locked in to use the in house band/dj, florist, decorator, which majority of the brides didn’t necessarily liked.

OFF PREMISE WEDDINGS

The advantages of having an offsite wedding:

Unique Venue. Plenty to choose from, whether is Miami Dade, Broward or Palm Beach Counties

Great Food. My chefs are formaly trained by masters chefs in France, italy…great work ethics and attention to detail. I can proudly say that I have top 5 chefs in Florida.

Great Service. My key employees have been with me for at least 5 years, some even more. My staff does not get paid minimum wage and actually support entire families with their earnings.

Customer Service. We pride ourselves in getting back to clients within 24 hours, sometimes even faster. Our sales team is reachable 24 hours a day, 7 days a week. We often deal with clients that are overseas and getting a call in the middle of night has become a normal occurence.

Custom Everything. Since no 2 brides are alike, no 2 parties should be the same either. We will create a custom wedding FOR YOU based on your specific taste and budget.

Value. We offer graet value. I am very confident in saying that based on our services we are very reasonable and most importantly, honest. I price everythingh myself and always get exactly what you pay for and then some.

Now, what is a wedding gotta cost in Miami?

On average, couples that live in Coral Gables, FL 33134 spend between $48,649 and $81,082 for their wedding. This does not include cost for a honeymoon or engagement ring. This is valid for a hotel wedding, nothing to brag about.

On average, couples that live in Delray Beach, FL 33444 spend between $24,478 and $40,796 for their wedding. This does not include cost for a honeymoon or engagement ring. Same as above, in a hotel wedding, nothing fancy.

On average, couples that live in Coral Springs, FL 33076 spend between $23,713 and $39,521 for their wedding. This does not include cost for a honeymoon or engagement ring.

On average, couples that live in West Palm Beach, FL 33414 spend between $30,138 and $50,230 for their wedding. This does not include cost for a honeymoon or engagement ring.

 

These numbers are really scary in today’s economy. I can do a fabulous wedding in a private venue for less than half. That with better food, better service, better everything.
